- Fun fact: Squash is a seed-bearing fruit! While its use common use is reserved for the fall and Christmas season, its an incredibly versatile ingredient that can be used all-year round. Its sweet, nutty, and incredibly rich in flavor that is perfect for drinks, dishes, and dessert!
- Also known as summer squash, yellow varieties of squash provide numerous health benefits. The vegetable is high in vitamins A, B6, and C, folate, magnesium, fiber, riboflavin, phosphorus, and potassium. Thats a serious nutritional power-packed veggie.
- Yellow squash is also rich in manganese. This mineral helps to boost bone strength and helps the bodys ability to process fats and carbohydrates.
How do we use this product?
As always, you cant go wrong with a good-old round of oven-roasted squash. Savor the color and texture of this brightly hued veggie by lightly braising it to create smothered yellow squash with basil. Incorporate in side dishes, soups, and salads.
